1. Add ingredients to a salad dressing bottle in the order given and shake to blend

2. Taste and adjust as necessary

Makes about three servings. Triple ingredients to fill a salad dressing bottle, or about 10 servings.

I created this dressing by reading other recipes and figuring out what my family likes. It’s really a pattern.

It’s fun to play with the pattern. The key is to substitute for about 1/3 of one ingredient at a time for an entire bottle of dressing. For example, sometimes I substitute other vinegars or lemon juice for two of the six tablespoons of white balsamic vinegar. Blue cheese Dijon mustard adds a nice kick. Vanilla extract adds a nice flavor. We like a lot of garlic, so I just keep adding till it tastes the way we like it.

You can also make this dressing with organic canola oil so it will keep longer in the fridge. Lighter taste, too.
