
Put the basil, pine nuts, garlic & oil in a food processor or blender until evenly blended. Stop once or twice to scrape the mixture from the sides of the bowl.
Transfer to a large bowl & mix in the cheeses.
Season to taste. When adding to pasta, add some butter or pasta water to give the pesto correct fluidity.
When storing (up to a week) or freezing, place the pesto in a small jar & add a thin layer of olive oil to each jar to keep the pesto from darkening.
