Heat the oil & gently sauté the chopped onion & garlic until softened. Cover the pan if desired to prevent burning.

Add the tomatoes with their juice, salt & pepper to taste.

Cook on a high flame for about 20 minutes, stirring occasionally.

When the sauce is reduced & thick, check the seasoning & stop cooking.

If you used plum tomatoes or chopped tomatoes, strain the sauce in a food mill or blender/food processor to make a smooth sauce, if desired.
