In middle school, William invited me over to his house to barbecue some chicken. I was still a little nervous about a couple of kids dealing with raw chicken, but William knew what he was doing. A little bit later, Giovanni pulled into the driveway, saw us at the barbecue, and promptly made us a dry rub. Working at Eataly for 3 years, favorite meals were a recurring topic of conversation. My go-to response was that quick dinner that was elevated to the next level.

Optional: Freeze tofu overnight and thaw before cooking.

1. Drain tofu and cut into two 1" blocks.

2. Place tofu blocks in between paper towels for at least 30 minutes to dry it out. Change towels frequently and place something flat on top.

3. Preheat oven to 300 degrees F.

4. Create the spice rub by mixing the paprika, Kosher salt, chili powder, brown sugar, black pepper, garlic powder, onion powder, and cayenne pepper together.

5. When tofu is done pressing, slice into cubes and put into a Ziploc bag with the apple juice. Shake the bag gently. Add 2 tablespoons of the spice rub to the bag and shake gently again until all cubes are evenly coated.

6. Bake on a parchment-lined baking sheet in the 300 degree oven for 15 minutes.

7. Add the tofu cubes to the barbecue and gently brush on the barbecue sauce. Turn frequently and continue basting until a nice bark has formed.
